What is the Extended UTXO model?

The Extended UTXO (eUTXO) model is Cardano's approach to handling state in smart contracts. It extends the UTXO model used in Bitcoin with additional features that allow for more complex smart contract functionality while maintaining the benefits of the UTXO model, such as parallel transaction processing.
